This week, the Chargers are in Kansas City, home of legendary BBQ. Enjoy a taste of KC with these mouth-watering spare ribs.
INGREDIENTS:
For the Rub:
¾ cup brown sugar
1 tbsp smoked paprika
1 tbsp garlic powder
2 tsp pepper
1 tsp kosher salt
½ tsp cayenne pepper
For the Ribs:
5 lbs St. Louis-Style Spare Ribs
1 ½ cups BBQ sauce
INSTRUCTIONS:
For the Rub:
In a small bowl, thoroughly mix the the brown sugar, smoked paprika, garlic powder, pepper, kosher salt, and cayenne pepper.
For the Ribs:
Preheat the oven to 300°F.
Line a baking sheet with aluminum foil and set a cooling rack on top. Lay the ribs on the rack in a single layer. Generously apply the rub to all sides. Bake for 2 ½ hours covering with aluminum foil at the halfway mark.
Remove the ribs from the oven and generously brush all sides with your favorite BBQ sauce. Grill (or broil) for 3-5 minutes per side or until the BBQ sauce has thickened and the ribs have charred slightly. Allow to rest for 10 minutes before serving. ENJOY!
